Stir-fried Snails with Lemongrass and Chili Recipe (Ốc Xào Sả Ớt)

Seafood is always mentioned when Vietnamese choosing noshes, especially snails. Snails can be cooked with chili and lemongrass. The combination between snails and lemongrass will create an amazing flavor when chewing. Besides, it can also be enjoyed with Tamarind Sauce.

Ingredients:
- Snails
- lemongrass and chili
- Dipping sauce: garlic, vinegar, sugar. salt, lime

Process:

Step 1: Clean well snails in cold water. Next, soak it into water and add a little vinegar and chili about 2 hours to get rid of soil. Then, clean again, wait to dry and mix with a little salt + chili powder, pour into basket.


Step 2: Peel off the hard parts of lemongrass, chop into short pieces, use the knife handle to smash it. Slice small chili.


Step 3: Heat the oil (2 – 3 teaspoons), add minced garlic and fry until it is fragrant. Next, add more lemongrass and chili into pan and fry well. Here is the first step to create the fragrant flavor. You should not neglect when cooking.


Step 4: Next, pour snails into pan and fry with a little salt + sugar. Cover the pan in 5 – 10 minutes. Sometime shake well to make sure snails can absorb all spices. Turn off the heat.
